The morning will begin at Union Square Cafe, ahead of opening hours, where participants will gain an inside perspective on one of the most iconic restaurants in the city—an enduring symbol of Danny Meyer’s legendary impact on modern hospitality, service culture, and placemaking in New York and beyond. Coffee will be provided at Daily Provisions, located next door.
From there, the group will walk to 67 Irving Place, the future home of Maialino, and an active commercial-to-residential conversion project. Leaders from USHG operations and members of the construction team will provide insights into restaurant operations, site selection, build-out strategy, and the complexities of adaptive reuse in a dense urban environment.
